Austrian-style Cornish Game Hens
Ingredients:
6 thawed cornish game hens
Salt and Pepper
Poultry seasoning
12 pitted prunes
3 apples - cored and diced
1 onion - chopped
1 cup Apricot Jam
1/3 cup white wine
1/4
cup melted butter
Directions:
Remove giblets and clean hens. Sprinkle hens inside and out with salt, pepper, and poultry seasoning. Stuff hens with prunes, apples, and onions; close cavity. Mount hens side by side on spit rod securing them tightly. Combine apricot jam, wine, and melted butter. Rotate hens slowly over medium heat coals for one hour. Brush with apricot mixture and roast for another 30 minutes.
Helpful hint
Make sure the hens are securely tied to the rod. Test spin them a few times just to make sure and check them periodically as they cook. |
