What is Pumpkin Butter?
Making pumpkin butter is similar to making apple butter, except making pumpkin butter is even more labor-intensive. This is because
preparing the pumpkins is very difficult. You need to cut the pumpkins up to make them more managable, then you have to remove the seeds, and after
that you need to bake them in an oven for several hours to soften them up. But, you're not done there. Then you have to squeeze out
all of the extra water before you can use them in your recipe.
Once you have prepared your pumpkin flesh for your recipe you proceed as you would with apple butter. You combine the pulp and
some spices, (such as cinnamon, allspice, nutmeg, cloves, etc), and sugar and/or apple cider and you boil this down until it has a
thick, spreadable texture.
Just like in apple butter your pumpkin butter will take on a dark color because the mixture boils long enough that the sugars caramalize.
