Quick and Easy Duck
Ingredients:
5 pound duckling
Salt
2/3 cup orange marmalade
1/3 cup barbecue sauce
Directions:
Sprinkle both sides of duckling with salt. Place breast side up on a rack in a shallow roasting pan.
Bake at 425 degrees for 45 minutes. Prick skin occasionally.
Reduce temperature to 325 degrees. Bake an additional 1 1/2 hours.
Pour off drippings. Brush with marmalade mixed with barbecue sauce and roast an additional 45 minutes to 1 hour until tender, brushing frequently with sauce.
Serving suggestion
Serve with wild rice and garnish with fruit. |
