Shaker Lemon Pie
Ingredients:
2 large lemons
4 eggs, beaten well
2 cups sugar
9 inch prepared pie shell
Directions:
Slice lemons, rind and all, into paper-thin slices. Combine with sugar and mix well. Let stand for around 2 hours, stirring occasionally. Add eggs and mix well.
Pour into pie shell, and arrange mixture evenly. Cover with pie shell top and slice a couple of slits near center.
Bake at 450 degrees for 15 minutes. Reduce heat to 375 and bake for an additional 20 minutes.
