Apricot Chicken Breasts (serves 6)
Ingredients:
6 boneless skinless chicken breast halves - pounded to 1/4-inch thickness
2 tablespoons butter - divided
1/4 cup apricot jam*
2 green onions - sliced
1/4 teaspoon balsamic vinegar
2 teaspoons brown sugar
Directions:
Place chicken breasts in a large, freezer zipper-topped bag and use a rolling pin to flatten to desired thickness. (It helps to have chicken partially frozen). In a skillet over medium high heat, melt one tablespoon of butter and brown chicken, about 2 minutes on each side.
Add remaining ingredients to skillet with remaining tablespoon of butter. Cover and simmer for 3-4 minutes or when chicken is fully cooked.
* Any flavor of jam can be substituted. Our favorite is Seedless Black Raspberry!!
