Peachy Pork Picante (serves 4)
Ingredients:
1 pound boneless pork loin- cut into 1 inch cubes
1 tablespoon taco seasoning mix
2 tablespoons minced parsley
2 teaspoons vegetable oil
8 ounces chunky style salsa
1/4 cup Peach Jam*
Directions:
Combine taco mix and parsley. Coat pork cubes with the taco/parsley mixture. Heat oil over medium heat. Add pork and cook 3 to 5 minutes. Add salsa and jam and reduce heat. Simmer until pork is tender, approximately 15 minutes.
* Any flavor of jam can be substituted. |
